I’ve had a hankering for these corn muffins ever since I saw them as I paged through Dorie’s book when I received it. This recipe couldn’t be easier…unless you just went to Au Bon Pain and bought them.
All you do is mix the dry ingredients. Mix the wet ingredients. Mix them together. Mix in corn kernels. Drop into muffin cups.
Throw into the oven. Take out. Cool. Not much work. And if you use a regular sized muffin tin like I did, you may yield 28 muffins, each containing 159 calories – far less than the monster corn muffin that ABP boasts containing 460 calories.
The only way that these muffins could have tasted better, was if i had a big bowl of chili to eat them with. Otherwise, it was a good morning treat as well.
